Glass + Griddle, the restaurant that will open next to Milwaukee Brewing’s new site in the Brewery complex, has hired its executive chef: Kyle Toner, formerly of Wolf Peach.
The restaurant, under construction at 1130 N. 9th St., is owned by Scott Lurie, who announced the hiring Thursday morning.
Toner will oversee the kitchen for Glass + Griddle, a beer hall style restaurant focusing on burgers and griddled menu items, as well as the site’s event space, Venue Forty Two.
“I have a ton of ideas,” Toner said. He’ll start testing menu items next week; the restaurant is due to open in mid-August. Toner has hired his chef de cuisine: Daniel Pope, who was the opening chef at All Purpose, the former Walker’s Point restaurant. Read more.
